The contractor swears that there is no way that the grout stained the stone and that the grout is just making the stone look darker.

The bottom 1 1 2 rows of tiles on 2 walls are turning gray. I m gonna guess he doesn t want to spend the money to buy a new bag of white and had some open bags of grey in the back of the truck but my crystal ball has been wrong before.
